1. Chicken Noodles Soup
Preparation time: 30 minutes

Ingredients
- ½ diced white onion
- 5 chopped garlic cloves
- 3 diced celery stalks
- 4 tbsp olive oil
- 3 chopped tomatoes
- I tbsp sea salt
- 2 thyme sprigs
- 6 cups chicken broth or water
- ½ tsp black pepper
- Fresh Parmesan cheese (optional)
- ½ cup fresh parsley
- 1 ½ lb. halal skinless chicken thighs
- 5 medium-sized diced carrots
- 1 lb egg noodles, uncooked
Directions
- Heat the olive oil on medium heat and add the chicken. Fry it for about 3–5 minutes before adding the celery and carrots.
- Sauté and add the garlic, onions, salt, pepper, and tomatoes. Pour in the water or broth and add the herbs.
- Leave the mixture to boil and let it cook for about 30 minutes.
- Remove the chicken from the mixture and take out the bone while shredding. Let the oil simmer, and pour the shredded chicken into the pot.
- Add the noodles and cook according to the package instructions.
- Serve with Parmesan cheese and parsley if you want.
2. Mushroom Soup
Preparation time: 35 minutes

Ingredients
- 2 tablespoons plain flour
- 1 bay leaf
- 1 liter chicken broth
- 4 tablespoons single cream
- 500g chopped finely mushrooms
- 1 minced garlic clove
- 2 roughly chopped medium-sized onions
- 90g butter
- A handful of parsley, chopped
Directions
- Heat butter in a large pan and pour in the onions and garlic.
- Cook for about 7-8 minutes and add the mushrooms. Cook on high heat for 3 minutes until it softens.
- Then, pour in the chicken stock and leave it to boil. Add the bay leaf and leave for another 10 minutes.
- Remove from heat and discard the bay leaf. Blend the mixture with a hand blender till it’s smooth and put it back on the heat.
- Stir in the cream and sprinkle parsley over it.
- Serve and enjoy.
3. Red lentil & Carrot Soup
Preparation time: 20-25 minutes
Servings: 4
Ingredients
- 2 cups red lentils
- 1 yellow onions (small)
- 1 tbsp olive oil
- 2 tbsp butter
- 2 tbsp tomato paste
- 2 cups chopped carrots
- ¼ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp ground black pepper
- 4 cups halal chicken broth
- Roasted pumpkin seeds
- Fresh parsley
Directions
- Warm the butter over medium heat, add the olive oil and pour in the onions.
- Sauté till it’s translucent, for about 4–5 minutes.
- Add the carrots and lentils.
- Leave to sauté for about 2 minutes. Then, add the tomato paste and stir.
- Pour in the red pepper flakes, salt, pepper, lentils, and water.
- Leave to boil and reduce the heat to simmer for 20 minutes.
- Blend the ingredients using a hand mixer.
- Serve with pumpkin seeds and chopped parsley.
4. Eggplant soup
Preparation time: 15 minutes
Servings: 4
Ingredients
- 2 tbsp minced garlic
- 4 tbsp olive oil
- ¼ cup white onion, diced
- ½ diced eggplant
- 1 tbsp dried herb mixture
- 1 tsp sea salt
- 1 cup water
- 4 ½ vegetable broth
- ¼ cup diced red pepper
- ¼ cup diced green pepper
- 1 ¾ cups chopped vermicelli noodles
- ½ tsp black pepper
Directions
- Heat oil in a pan, add the onion and sauté.
- Cook till it’s translucent, and add the greed & red pepper. Pour in the eggplant and garlic and mix the oil and other ingredients.
- Add the herbs, salt, and pepper. Pour in the vegetable broth and let it boil.
- Cook for 39 minutes and adjust the salt & pepper. Then, add the noodles and water.
- Leave to cook for 5-7 minutes and remove from the heat.
- Serve with Parmesan cheese, if desired.
5. Quick Vegetable Soup
Preparation time: 40-50 minutes
Servings: 6
Ingredients
- 2 sliced carrots
- 2 diced celery stalks
- 14-oz can of chicken broth
- 15.5 oz can of diced tomatoes
- 1 large diced potato
- 1 cup chopped green beans
- 1 cup corn kernels
- 1 pick creole seasoning
- Salt and pepper
- 1 cup water
- 11.5 oz can tomato-vegetable juice cocktail
Directions
- Combine the ingredients in a pot and season with salt, pepper and creole seasoning.
- Let it boil till the vegetables are tender.
- Dish and serve.
5. Pumpkin Soup
Preparation time: 15 minutes
Serving: 4-6
Ingredients
- 1 cup water
- 2 peeled garlic cloves
- 1 onion
- Salt & pepper
- 3 cups chicken broth
- 2.4 pounds pumpkin (unpeeled)
Directions
- Slice the pumpkins and peel them while removing the seeds.
- Cut into 4 cm chunks and put into a pot with the broth, water, onion, and garlic.
- The liquid won’t cover the pumpkin fully, so leave it to boil and simmer till the pumpkin is tender.
- Remove from the heat and use a stick blender to blend all till it’s smooth.
- Season with salt and pepper.
- Serve and drizzle cream on it. Sprinkle pepper and parsley if you wish.
6. Chicken Soup
Preparation time: 50-55 minutes
Serving: 4
Ingredients
- 1 grated ginger
- 4 tbsp olive oil
- 2 medium-sized onions, chopped
- 2 medium-sized carrots, chopped
- 7 grated garlic cloves
- 2 teaspoon sea salt
- 1 ½ teaspoon black pepper
- 1 lb halal chicken
- 1 ⅕ tbsp thyme
- ½ cup spring onion, chopped
- ¼ cup cream (optional)
- 1 cup of water
- 1 chicken stock cube
- 3 chopped celery stalks
- 1 cup coriander (optional)
Directions
- Get a pan and sauté onions, carrot, celery, ginger, pepper and salt.
- Let it simmer for about t0 minutes, and add the chicken stock, chicken, thyme and spring onions.
- Cook on a low for about 45 minutes. Remove the chicken bones.
- Add cream and coriander if you desire.
- Serve with bread rolls, and enjoy.
